I want very large cupcakes with stiff icing - like you see in the bakery! They can be chocolate cake with pink/strawberry frosting or vice versa. Please help!

Everyone who I have ever given my chocolate strawberries to, (homemade), says that they are very good. I have asked some people and they said that I could open a small business if I wanted to. If I were to open one, it would be small, local and well priced. What do you think? Should I?

White chocolate is ok but I prefer dark. I want to make some chocolate covered strawberries and my friends tell me just to melt hersey's chocolate but I was wondering if there is a better kind to use...
